Sometimes, all you want from your breakfast is greens and protein, in less than ten minutes.

Serves 1

2 eggs
1 cup chopped greens: broccoli, zucchini, asparagus
1/4 avocado, chopped
30g goats cheese

Warm a skillet on the stove over medium heat. Scramble the eggs in a bowl, adding salt and pepper to flavour.

Add a dash of olive oil to the warm skillet, and pour in the eggy mixture, evenly spreading it to cover the base. When cooked through on the bottom, flip it over to cook the other side. If this is too tricky, heat up the grill in your oven and gently cook the top. Once cool, place on a plate.

Reheat the skillet on the stove, adding a dash of olive oil and the chopped greens. Stir fry until soft.

Sprinkle over top of the cooked egg, adding avocado and goats cheese.
