HOLA! Something we are more and more conscious about is eating less meat, and consuming more plant-based foods. This dish is a swift and delicious meal that will fill your tummy and make your taste buds jump for joy.

Serves 2

Ingredients

1 tbsp olive oil
1/2  diced red onion
2 cloves garlic, minced
1 cup dry quinoa, rinsed well (cook with 2 cups of water)
1  can diced tomatoes
2 corn on cob (or 1 can corn kernels)
1 can of beans (your choice, black, red kidney beans )

Mexican spice mix

Note: You can also buy taco mix  if you don’t want to buy or have these spices

1/4 tsp black pepper
1/2 tsp  sea salt, more or less to taste
1 1/2 teaspoon cumin
1/4 tsp chilli powder
1/2 tsp chilli flakes
1/2 tsp paprika
1/2 tsp smoked paprika
1/2 tsp dried oregano

Garnish

1 avocado, chopped
handful chopped coriander/cilantro
dollop of Greek yogurt
corn chips or pita bread

Method

Cook the quinoa according to pack instructions.

While quinoa is cooking, fry up oil, garlic, onion and corn. Add the cooked quinoa to the fry pan with the tomatoes and Mexican spice mix.

Cook for 5 minutes or until the liquid has been cooked through. Serve with avocado, dollop of Greek yogurt and corn chips or baked pita bread.
