Nutella is like the food group no one ever tells you about until you go to Europe and realise it’s basically God. But now that we are home and France is just a distant memory, we thought it was time to feed our addiction to this hazelnut dream in a healthier way.

INGREDIENTS

1 cup hazelnuts
1/2 cup coconut milk
1/3 cup syrup (honey or rice malt)
1 tblsp coconut oil, melted
1/4 cup cacao powder

METHOD

Preheat oven to 180ºC.

Bake the hazelnuts for 8-10 minutes until browned. Now for the horrendous part – rub the hazelnuts until the skins come off. Probably the least interesting job ever, we like to bundle them up in a tea towel and rub them through our hands. It works, and it’s necessary – the skins are bitter.

Pop the nuts in a food processor until smooth.

Add everything else and process until well mixed.

If you want it saucier, add more coconut milk.

Store in the fridge for up to a couple of weeks, and pretend you are in Paris.

NOTE: For a raw version you simply don’t cook the hazelnuts and throw them in the processor as is. We just prefer the roasted, nutty goodness, sans skins.

Preheat oven to 180ºC / 350ºF. Bake the hazelnuts for 8-10 minutes, until browned. Rub most of the skins off – they can be a bit bitter (you don’t have to be too precise). Grind the nuts in a food processor until smooth. Add the remaining ingredients and process until well mixed. Add extra coconut milk if you want more of a ‘sauce’ consistency.
